Cottage Cheese – The Forgotten High Protein Food?

Here is a sweet dish containing lots of dairy that may be popular around the holidays. This is another great recipe using cottage cheese as one of the ingredients. With the holidays approaching, many people are having the desire for sweet dishes. Give this one a try!

Kugel:

  • 1 – 8 oz. pkg. of large (wide) egg noodles
  • 1 – 16 oz. pkg. of 4% creamed cottage cheese 
  • 6 eggs – separated  
  • ½ cup white sugar
  • 6 tbsp. sliced butter
  • 1- 8 oz. pkg. cream cheese, softened
  • 4 tablespoons of sour cream 
  • Pinch of salt
  • 4 tbsp. melted butter (for topping)
  • ¼ cup white sugar (for topping) 
  • 1/3 cup graham cracker crumbs (for topping) 


Bake Time:
60 minutes 

Prep Time: 30 minutes

Yield: 8-10 servings 

Directions: Preheat oven to 350F. Grease a 9x13” glass baking dish.  

Bring a pot of lightly salted water to a boil. Add the egg noodles and cook for 8-10 minutes until al dente. Drain water and stir in the 6 tablespoons of sliced butter. 

In a medium bowl beat the egg yolks with the sugar and cream cheese. Stir into the noodles and add the sour cream, cottage cheese, and salt. Beat the egg whites until they are stiff and fold them into the mixture. Transfer the mixture to the prepared baking dish. 

In a small bowl, combined the melted butter, ¼ cup of sugar, and graham cracker crumbs. Sprinkle it over the noodle mixture. 

Bake in a preheated 350F degree oven for 60 minutes.
