Cottage Cheese – The Forgotten High Protein Food?

Here is another delicious recipe using cottage cheese as one of the key ingredients. For those homemade bread or cornbread lovers, this recipe is for you! This is an easy bread to prepare using one box of Jiffy© corn muffin mix and has a short 15-20 minute baking time. Give it a try you won’t be disappointed!

Cottage Cheese & Broccoli Corn Bread


  • 1- 10oz. package of chopped broccoli (frozen is fine, but wash it first and drain)
  • 1 small chopped onion
  • 4 eggs – beaten
  • 1 stick of margarine (4oz.) melted
  • ¾ cup of regular 4% cottage cheese
  • 1 teaspoon of salt
  • 1 box of Jiffy© corn muffin mix

Combine all of the ingredients in the order listed above into a mixing bowl. Mix well with a hand mixer. Pour the “batter” into a 9” x 13” glass baking dish. Bake at 400F for 15-20 minutes until golden brown. Cut into squares, serve, and enjoy!
