Gellan Gum

Gellan gum is one of the newest ingredients in foods and beverages and is made through fermentation using Sphingomonas elodea, a single-cell organism found on lily pads. Fermentation (also used to make wine, beer and bread) makes food ingredients environmentally-sustainable and requires fewer land and water resources than those used to make other ingredients. 

Increasingly used in dairy and non-dairy foods and beverages, gellan gum provides unique recipe properties that have been highlighted in creations by noted chefs such as Heston Blumenthal and Wylie Dufresne.
