Vitamin based

Vitamin-based antioxidants include non-phenolic antioxidants such as all vitamin C types (ascorbyl palmitate and ascorbic acid) as well as some phenolics such as various tocopherols (vitamin E) that can be of both natural or chemical origin.

They are able to slow down the lipid oxidation process at its different phases and avoid the appearance of lipid free radicals and lipid hydroperoxides so they delay the development of oxidative rancidity.
