Acetic acid esters

Acetic acid esters (ACETEM)

Acetic acid esters are produced from monoglycerides reacted with acetic acid. Variations are obtained through the type of monoglyceride and the degree of acetylation.

Danisco's trade name for acetic acid esters is GRINDSTED® ACETEM.

Application areas

Acetic acid esters are film-forming flexible molecules. They are often used for coatings as a barrier against moisture loss and fat oxidation.

Examples of application areas include:

  • the flexible plastic character makes GRINDSTED® ACETEM efficient as a plasticiser in chewing gum and plastic applications
  • acetic acid esters are alpha-tending molecules. GRINDSTED® ACETEM is used to stabilise the crystal form of topping powders for aeration and foam stabilisation purposes 
  • GRINDSTED® ACETEM is used in cakes for improved whipping properties of the cake batter and an improved cake crumb structure

  • GRINDSTED® ACETEM 70-00 P
