Citric acid esters

Citric acid esters are produced from monoglycerides reacted with citric acid.

Variations are obtained through: 

  • the type and concentration of monoglyceride 
  • the concentration of citric acid
  • the degree of neutralisation

GRINDSTED® CITREM is Danisco's trade name for citric acid esters.

Application areas

Citric acid esters are highly hydrophilic molecules.

Examples of application areas:

  • anti-spattering purposes in margarine
  • reduced fat separation in meat emulsions
  • a recent application is for the control of flow properties in chocolate confectionery. Citric acid esters is a non-genetically modified alternative to soy-lecithin
  • our latest innovation, GRINDSTED® CITREM 2-IN-1, is an alternative to the combined use of lecithin and polyglycerol polyricinoleate (GRINDSTED® PGPR), thus reducing the number of ingredients used
