Lactic acid esters

Lactic acid esters are produced from monoglycerides reacted with lactic acid. Variations are obtained through the content of mono-ester and lactic acid.

 

GRINDSTED® LACTEM is Danisco's brand name for lactic acid esters.

Application areas

The LACTEM range is well known for its ability to increase whippability in both dairy and non-dairy creams. Also, usage in margarine and topping powders can be recommended to provide improved aeration and stability of the product in question.
