PGE

Polyglycerol esters are produced from esterification of polyglycerols with fatty acids.

Polyglycerol esters are often used in combination with distilled monoglycerides.

Variations are obtained through:

  • the type of fatty acids and polyglycerol
  • the degree of esterification

GRINDSTED® PGE is Danisco's trade name for polyglycerol esters.

Application areas

Main applications are in the fine bakery area, where polyglycerol esters provide improved cake batter performance, crumb structure and cake volume.

Used in frying margarine, GRINDSTED® PGE provides reduced spattering.
