PGPR

Polyglycerol polyricinoleates are produced from esterification of polyglycerols with polymerised ricinoleic acid.

Variations are obtained through:

  • the chain length of the polyricinoleic acid 
  • the degree of esterification of polyglycerol and polyricinoleic acid

GRINDSTED® PGPR is Danisco's trade name for polyglycerol polyricinoleates.

Application areas

GRINDSTED® PGPR is a complex molecule with a unique functionality in terms of reducing yield stress in chocolate. It can replace fat (cocoa butter) in chocolate while maintaining the same flow properties during production.

Thus, when thin-flowing chocolate is required for enrobing or when producing hollow products, e.g. Easter eggs, GRINDSTED® PGPR can be used as a cost-effective alternative to a higher fat content.

Other application areas include emulsion stabilisation in low-fat spreads and tin grease emulsions.
