SSL/CSL

Sodium and calcium stearoyl lactylates (SSL and CSL) fatty acids are produced from lactic acid with fatty acids.

Variations are obtained through:

  • the type of fatty acid
  • lactic acid content 
  • the degree of neutralisation

SSL is neutralised with sodium while CSL is neutralised with calcium.

Grindsted® SSL/CSL is Danisco's trade name for sodium and calcium stearoyl lactylates.

Application areas

The products can be used in:

  • yeast-raised bread for anti-staling, improved volume and dough stability
  • coffee whitener for feathering stability and improved whiteness
