These added functional ingredients offer many advantages over the use of skimmed milk powder alone, including:
- improved and more consistent acidification performance
- improved flora composition control and hence improved final product consistency
- application dependant but often reduced cost-in-use
Application areas
LAB is used to acidify milk producing fermented dairy products including cheese, yoghurts and other fermented milks.
When used for this purpose LAB is often referred to as a ‘starter’. There are two main methods of application of these starters:
- by Direct Vat Inoculation (DVI) whereby a highly concentrated ‘ready made’ starter is added directly to the cheese or yoghurt milk
- by prior propagation of the starter, commonly referred to as 'bulk starter'
Much of the dairy industry today has adopted DVI as the preferred method due to the convenience, security and consistency this solution offers. Danisco is a market leader in DVI technology and offers a wide and comprehensive range of DVI products.
