Fermentation media

Fermentation or culture media is a complex blend of skimmed milk powder or whey protein powders supplemented with nutrients, buffering and chelating agents that are specifically designed to support the propagation of Lactic Acid Bacteria (LAB) for use as a bulk starter.

These added functional ingredients offer many advantages over the use of skimmed milk powder alone, including:

  • improved and more consistent acidification performance
  • improved flora composition control and hence improved final product consistency
  • application dependant but often reduced cost-in-use
Application areas

LAB is used to acidify milk producing fermented dairy products including cheese, yoghurts and other fermented milks. 

When used for this purpose LAB is often referred to as a ‘starter’. There are two main methods of application of these starters:

  • by Direct Vat Inoculation (DVI) whereby a highly concentrated ‘ready made’ starter is added directly to the cheese or yoghurt milk 
  • by prior propagation of the starter, commonly referred to as 'bulk starter'
