Cellulose gum

Cellulose gum (CMC) is one of the most common hydrocolloid or thickening agent used by the global processed food industry due to its versatility, ease of use and effective cost-in-use.

Cellulose gum is based on natural cellulose strains such as for example the lints from the cotton seed and its main functionality is to add mouthfeel and texture, stabilize proteins, retain moisture and form oil-resistant films in a vast variety of food applications.

Application areas

Cellulose gum is used in the following industries and applications.

Industry Application
Bakery Frozen dough, cakes and donuts, tortillas, noddles
Beverages Juice beverages, protein beverages, concentrates, instant beverages, low/no sugar drinks and alcoholic drinks.
Culinary Dressings, soups and sauces
Dairy Acidified milk protein beverages, yoghurt drinks, buttermilk, ice-cream and sorbets, cream cheeses and processed cheeses.
Fruit Fruit preparations and bakery fillings.
Meat Emulsified meat products, artificial sausage casings
