Guar gum

Guar gum is obtained from the seeds of the guar gum bush (Leguminosa: Cyamopsis tetragonolobus), which is cultivated in India, Pakistan and Texas/USA.

The guar gum bush is an annual plant with a height of 90-180 cm. The seeds are contained in a hull (6-8 cm long), which is the commercial source of a bland, off-white guar gum powder. The hull and germ of the seed are separated from the endosperm by a natural milling process.

Guar gum, like LBG, is a galactomannan consisting of a mannose chain branched with galactose units. As a result of its high water-binding capacity, guar gum provides extremely high viscosity in water-based systems even at low dosage levels. Guar gum is mainly used as a thickening agent.

Guar gum can be used in a wide range of products, since it remains stable at pH values ranging between 3 and 11. Furthermore, guar gum has the advantage of being cold soluble. Guar gum is well known for its synergism with xanthan gum.

MEYPRO® Guar is Danisco's trade name for guar gum. Production facilities are situated in the Netherlands.

In North America, a domestically manufactured guar gum under the Jaguar brand is marketed and sold by Danisco in Vernon, Texas.

Application areas

Guar gum is used to modify texture, control syneresis and increase viscosity in a wide range of food products:

  • dressings
  • ice cream
  • cakes
  • pet food
  • beverages and dairy products

Guar is known to be one of the most cost-effective thickeners among other hydrocolloids.

Special Guar commercialised under the MEYPRODOR® brand is a pure, high-grade guar manufactured using a special multi-stage production process.

Meyprodor® products have a low total plate count and are neutral in taste and odour.
